I have ate raw sweet potatoes for years. The next time you decide to make a coleslaw or something you would normally put a carrot in grate up sweet potato instead. Carrot raisin salad you can substitute with sweet potato also. How about some sweet potato in a fresh garden salad. There are many uses for the RAW sweet potato.:yes: Just a few thoughts. Worth |

I have really enjoyed sweet potato pancakes. Use just cut you flour mixture (i use bisquick) in half and use peeled,cooked, mashed sweet potato for the other half. So good!
i have also adapted the same formula to make sweet potato bread and sweet potato pound cake. |
Spicy Sweet Potato Fries
The spices are somewhat on the Indian side of things and when these baked fries are dipped in the sauce, they're pretty addictive. I like to briefly toast the seeds in a small pan before grinding. I usually make a quadruple batch of the spice mix and keep it in a jar for quick later use.
1 tsp coriander seeds 1/2 tsp fennel seeds 1/2 tsp dried oregano 1/2 tsp red pepper flakes 1/2 tsp salt 2 lbs sweet potatoes (about 4 medium), peeled and cut into wedges 2 TBS canola oil [B]Mayo Dip:[/B] 1 1/4 cup mayo 2 TBS lime juice 2 TBS minced fresh cilantro (can use dried in a pinch. Just let sit longer to flavor up) 2 garlic cloves, minced 1 tsp ground mustard 1/4 tsp cayenne pepper 1/8 tsp salt Preheat oven to 400 degrees. 1. In a small bowl, combine the dip ingredients and put in the refrigerator to chill. 2. In a spice grinder or with a mortar and pestle, combine the first four ingredients into a powder and then stir in the salt. 3. In a large bowl, combine the potatoes, oil and ground spices; toss to coat. 4. Transfer potatoes to a greased 15"x10"x1" baking sheet and bake uncovered for 30-35 minutes until crisp and golden brown, flipping wedges over occasionally. Serve wedges with the mayo dip. |

That's a nice recipe. Wonderful texture to it. I plan to make that many times. I added pumpkin spices, which for me is:
1/4 t cloves 1/2 t nutmeg 1 t ginger 1-1/2 t or 2 t cinnamon May drop the sugar to 1-1/2 c next time, but it was pretty good with 2 c. It took about 65 minutes at 350f in convection oven, then dropped to 300 for 15 minutes more. Stirred many times. Next time, probably set to lower temp for this oven. |
