Lamb, Ham, bunny, or Spam...

2 Attachment(s)
I'm rotis-ing a lamb leg. Made a rub and a lemon mustard marinade. Too many recipes and just did what i do...

Nice veggies at the market....artichokes and asparagus. My tomatoes are 3 inch babies and gotta do what we do this time of year...

Happy Easter tomVille.

Father'sDaughter March 26, 2016 11:04 PM

Ham, but first we have to get through the ravioli, sausages, meatballs, eggplant parm and we have to save room for pastries, Easter bread and rum cake...maybe we should skip the ham.

AlittleSalt March 27, 2016 12:13 AM

Isn't it amazing how good mustard can make some meat taste.

Asparagus is one of our favorite special vegetables. They usually cost near $3 a pound. A local grocery store has been selling it for $1.29 a pound for the past 3 weeks. We have eaten so much of it lately - I asked my wife if she wanted some for tomorrow's meal and she said, " I want sweet pea salad". I guess you can overeat the more expensive vegetables too. I can make sweet pea salad any day of the year for around $1.25 or less.

matereater March 27, 2016 08:40 AM

salt, never heard of a 'sweet pea salad' whats in it besides sweet peas ?

ContainerTed March 27, 2016 10:25 AM

Beans, potatoes, cabbage, and peas.
Cornbread, sausage, fish, and cheese.
Ham and eggs, soups and steaks.
Wienies, oysters, and salmon cakes.

My granddaddy and I used to play a game of what's for supper. I would ask the question and he would reply the above. Then we had a big hug. Every Easter, I always remember that this celebration is really about family values and memories.

So, in this family, today is about being together and the menu really doesn't matter all that much.

Happy Holiday to all.
salt, never heard of a 'sweet pea salad' whats in it besides sweet peas ?
It is
Sweet Peas
chopped onion
sweet relish
chopped cheddar cheese
chopped hard boiled egg
mayo
salt and pepper

My mother taught me how to make it when I was a child. I've made it with fresh peas and with frozen peas, but it tastes best with canned peas.

Worth1 March 27, 2016 10:44 AM

I forgot all about Easter and had no idea it was today.
But just now Zeus my dog friend from up the street came in the house to see me.

It looks like this time they tried to tie him up with an extension cord and he chewed through it.
As for sweet pea salad mayonnaise salt black pepper sweet red peppers chopped onion olive oil sugar vinegar if you want.
The sky is the limit as to what you can put in it.
I like to use frozen peas they are much better than the canned ones but both will work and you have to use what you can.

Well a ham is in the oven, klobasi has been cooked and lying in a bed of sauerkraut in the crockpot, and I made two kinds of Hrudka (Slovak Easter Egg Cheese), one with black pepper and the other with crushed red pepper flakes.

coronabarb March 27, 2016 01:22 PM

Sweet Pea Salad - back in the mid 80's, I used to make a salad called Crunchy Pea Salad. It used thawed, drained frozen peas, along with cashews (added at last minute) and other things like red onion, jicama and celery. It had a mayo based sauce and I think I added parmesan cheese to that. Pretty yummy stuff!

Worth1 March 27, 2016 02:02 PM

I love cheese but no cheddar cheese in any salad for me of any kind.
Hard cheese yes just not cheddar.
If I were to be presented with it I would remove it from mine set it aside and eat it on its own.
Maybe grated but not big chunks.
It is one of the very few things I am picky about.:)

Here is what I have had for Easter dinner so far and the recipe.
Open a package of crackers and eat all but two of them.
Let sit on counter for two months and then eat with two cups of coffee.
It is 6:00 PM and I have been so busy this is all I have had to eat all day.
As bad as it seems cooking is about the last thing I want to do right now.
The other night all I ate was two slices of bread with mustard on them.
I simply cant work on my project take care of a garden clean house and cook.

For me today it was 3 crunchy tacos from Taco Bell. Tasted good too.

I love slices of spam fried nice and crispy in butter and a side of sliced tomatoes with ranch dressing.

Yum... Pea salad. I can eat the heck out of it, but somehow when I have tried to make it, it just doesn't taste as good as what the church ladies make and bring for get togethers.
I'll have to give the recipe above a try. Wonder how it would taste if a few cherry or grape tomatoes got added to the mix.

I mean really like what could go wrong adding tomatoes.

We had Easter dinner with my mother on Saturday and it was a treat. Mom roasted chunks of potato and sweet potato and a big slab of salmon. I made mussels in black tomato aspic - from frozen tomatoes of course - and served on a bed of chickweed since that's the only green thing I have besides onions. And a few bits of endive from the farm cellar. And I made blueberry cake with cinnamon glaze for dessert. And bro brought a loaf of delicious sourdough, but of course he didn't make that.;)
Best of all, Mom finally heard me whining that we never get chocolate bunnies any more8-), she bought us each a ritzy dark chocolate bar. :D Treat!!!
Worth, I have the same problem so I learned my lesson, do the bulk cooking before you start a project, so you have some ready meals in the freezer you can dump in a pot and reheat. Cracker day is never a good day for me. :?
Oakley, it's nice to see the Mt. Scio savory in your kitchen. I thought no one in the world appreciates the savory but us here. :)

I'm near out of my savory :surprised: I think i'll take a two day drive and a ferry ride soon to re-stock:twisted: (one year i bought the entire cardboard display of little packets as they were out of the containers)

Savory in Fish-n-Brewis divine.

Worth, keep some of that good Austin Boudin in your freezer...
I like to keep all sorts of pints and 1/2 pints of homemade broths and broth with beans and rice with broth/w greens etc etc and mix and match for a quicky meal.

The lamb was fantastic, pink and tender. So much left over! Looking at recipes now and then froze some thick slices for later...tonight will be a Souvlaki taco-ish thing.

(bunny provided to divert the focus of the not so pretty meat hunk)

oakley March 28, 2016 03:19 PM

Bower, we had a tin of fussels on our blueberry tart....one tin left.

bower March 28, 2016 04:31 PM

omg the fussels cream.
Some young friends of mine turned up one day with half a dozen tins, said there was a shortage and you couldn't get it any more. So into my apocalypse larder. (and yet, there's none left now already!)

coronabarb March 28, 2016 04:34 PM

Okay, what are fussels? I thought maybe it was a typo at first.

We had both apricot glazed ham and baby back ribs, with mashed potatoes. Hubby is a boring meat and potatoes guy. For sides, I had a great salad loaded with goodies from the farmers' market (French Breakfast radishes, fresh salad greens, sunflower sprouts) and our garden. I also prepared some collard flower shoots (you cook them like asparagus) sauteed with garlic and wild Black Trumpet mushrooms also from the Farmers' market. So very good and you won't find that in any grocery store.

They are mussels but with a fluffier texture.

:)) It's a thick tinned cream. Made in Denmark believe it or not, but somehow a household staple in the bays of Newfoundland.

oakley March 29, 2016 04:25 PM

How's the weather?

In Newfoundland.
(i'm afraid to ask) Looks like the storm that just passed us in NY is heading your way...

We will have to hop the PortAuxBasques ferry and i have some wiggle room so we don't get stuck on it. (and why we get a cabin). We were there during storm Igor.

It does look like the weather will soften up here by next Tuesday and all looks good up through Maine and NovaScotia.

Like the spoof tourism video. :))

Couldn't get the video to work. :?!?: Will try again later. 8-)
As for the weather it's above zero here which is wonderful to see for a change. :D
But it was gusting 96 kph this afternoon, which is a bit above the casual 70 I expected. Wouldn't want to be out in an open boat. Just caught the weather on NTV, it's snowing out west and central. And will snow a few cm here overnight, but there's a big warmup expected later the week... and wet and windy though. High of 10 C on Saturday, says Environment Canada.
Are you travelling next week then?
I like to look at this Norwegian site for a longer extended forecast: hate to say it but they're expecting snow all across the island on Wednesday next week - maybe 8 cm here but more and colder on the west coast so it will be nasty in PortauxBasques! And on the water no doubt.
http://www.yr.no/place/Canada/Newfoundland/St._John%27s/long.html
Every forecast is subject to change without notice, of course. ;)
But March has been nasty, except for coming in like a lamb. This week is warmer but all wind and rain. Dread the Wreckhouse area coming from the ferry. It's like Igor twice a week there all the time. :?: I'm not happy to see more colder weather in April.
One good thing, there's very little snow down this winter, so whatever comes, it shouldn't linger, not here anyway. Bonavista may be a different story. I noticed this winter, that the worst of the storm tracks were always over Clarenville and missed us. Chance there are a few snowbanks loitering around there as yet.

Nice little spoof.
Oakley, here are a couple of links I find very handy if I have to travel anywhere on the island.
This one has a ton of cameras all over the place. You can see what a big difference today, it's seriously winter in Corner Brook and the Northern Peninsula. And yep, snowbanks lurking off the road in Clarenville, we still have some in the woods as well.
http://www.stormpost.com/cams_nl.pl
The other one is the government site, just a few highway cams but in some places anyway they give you the road temperature as well as the air, so you can judge if there's a risk of black ice. (I hate that stuff the worst because you can't see it...)
http://www.roads.gov.nl.ca/cameras/default.stm

In case there was any doubt that it might be spring already on the island... look sir, look into the camera and see for yourself! :(;)

Thanks Worth.
I do get a bit weepy when i see that. It is the most beautiful place i've ever been and fortunate to have a home there....my future retirement home. And not such a tomato challenge as one would think. Just a bit of help needed by a greenhouse front spring and back fall. ish,

Even gets a bit hot July through Sept. 80 max.

One winter at holiday we were in t-shirts for a day.

Thanks for the links Bower. I've come across them in the past...bookmarked now.
The one from La Manche is interesting as it is someones garden.
The Saint-Pierre et Miquelon is like a live postcard...watched the sunrise this morning.

Before i dressed my lamb i cut off a lb and ground with some pork and a bit of sirloin and made meat balls. (need to write down the recipe before it escapes me)
