The Hatch Valley is in the Rio Grande Valley. I'm in the Rio Grande Valle, north of Hatch about 180 miles.

In all honesty I think you may be a little heavy on the tomatoes for a good salsa.
You dont want to wash out the peppers flavor.:))

This is probably a dumb question, but besides the name of the town is Hatch the name of a pepper or does it mean they just grow alot of green peppers. You hear on the tv alot about Hatch peppers, but don't really know what it means.

There was an article about just that question on NPR 'Texas Standard' last week. The answer: It's a marketing thing. For instance, there is no such thing as a "Hatch chile". Most are just Anaheims. IIRC, it was the NM Ag Dept. that started the whole thing by pitching a "Hatch Chile Festival" to grocery stores here in Tejas, and the HEB chain was the first big bite. It took off like a rocket and now apparently it's being done all over the country. Initially the source was the Hatch Valley (around Hatch, naturally), but the peppers could well come from somewhere else.

Whatever the truth, it's great to see people who would never think of buying hot peppers diving in and getting educated. Doesn't look like the Festivals are going away any time soon. (Our festival ended on the 23rd, btw.)

One thing I haven't figured out: Central Market here sells both 'normal' and 'hot' versions as Hatch. I really couldn't tell them apart visually, and the sort isn't perfect, but the hot versions are mostly downright spicy. Someone must be growing a hot variation. I wonder how they keep them separate.

I personally keep Pace in business (or try to). Is Original Hot a great salsa? Heck no. Is it good enough for some purposes, like guacamole, chips in front of the TV? Heck yes. And it used to be that you couldn't buy anything else in the supermarket.

dustdevil, Starlight, the original commercials had "New Jersey !?!" instead of NYC. Somehow I have always found that funnier. You can find them on youtube, but the resolution is abysmal. There was a whole series of Pace commercials, many of which I'd forgotten.

No I am from Texas I lived in Missouri from the 2nd grade till the 6th grade.

Parts of family has been in Texas since before it was independent from Mexico.
My great grand father was a doctor in Texas right after the war between the states.;)
Our family cemetery is a Texas historical landmark along with a dedication to my great grand father.
