Easter Meal 2018

Hey, everyone! What are you having for your Easter meal this year?

jtjmartin March 30, 2018 02:40 PM

Well, Good Friday dinner looks like catfish and succotash!

We have a Virginia ham for Easter. Happy holiday to those who celebrate . . . the start to Spring for those who don't!

We don't have the complete meal planned yet, but it starts with:
Slow smoked brisket
Deviled Easter eggs
Roasted corn on the cob
??? and/or maybe a homemade cheesecake.

There is an elote stand/trailer at the Mexican store where I buy my Mayocoba beans at one of my job sights in Del Valle.
I personally would forgo the mayonnaise and go with a fresh farmers cheese/Queso Fresco/blanco instead or even sour cream.

The whole Easter meal has completely slipped my mind as I had no idea it was Easter coming up.:dizzy:

All I have had my mind on is work.
Pardon me for not coming to my own funeral because I have work to do.:))

? The internet is telling me elote is corn on the cob. What's with the mayo and/or cheese?

Easter dinner will be spiral cut ham, au gratin potatoes, home-grown yellow roma beans almondine, and some sort of fruit crisp.

I had to look it up too! Lolol learned something new today!

Worth1 March 30, 2018 06:33 PM

Yeah just take your regular grilled corn on the cob with charred kernels and add a little chili powder and sour cream or queso fresco.
Maybe add a sprinkle of Mexican oregano.
Maybe some hot pepper powder or habanero too.
Nothing special at all, your choice.
The recipes are as numerous as there are Mexicans and Gringos alike.
But lime always lime.

I had fish and chips for supper tonight. Beer battered pollock out of a box, but man is it good. They used a real beer to make that.:lol:
No plans for Sunday yet. Mom usually invites us to Easter dinner and then I complain that there's no chocolate bunnies. Just like xmas, easter is best for kids. :bummer:;)

Bower, you've just volunteered to bring the chocolate bunnies to Easter dinner!

Doesn't dull the memory of gorging on a giant hollow egg. Huge treats for a kid. :)

Nan_PA_6b March 30, 2018 08:55 PM

Oh yes, there will be Cadbury Cream Eggs.

There's no corn on the cob! Albertson's had it in their sales paper 8 ears for $2, but there wasn't any. That seems to happen often here at that store.

Some homemade Mac and Cheese may take its place depending on what the other stores nearby have in the way of corn on the cob. It is off-season for corn here where sooo much corn is grown.

pmcgrady March 31, 2018 12:17 AM

Usually cook a leg of lamb, but not this year...
Going to The Ariston ....Prime rib, ham, halibut, it's all good. And I don't have to do any dishes!

imp March 31, 2018 12:25 AM

Ham in with the scalloped potatoes, green salad. That is plenty more than I can eat, LOL, and I am sure Belle will get some as well. Though Belle is not a fan of green salads unless there is gravy on it.

Nan_PA_6b March 31, 2018 01:11 AM

Everything's better with gravy!

Scallops scampi, fresh roasted asparagus, scalloped potatoes with leeks.

Nan_PA_6b March 31, 2018 03:09 AM

That sounds tasty, Andrey! I bet it's good with walnuts and caramel sauce...

Yes, Belle likes gravy on most things, and the more gravy, the better to her!!!
She is getting fat, so I have to watch what she eats a bit more.

My grandmother ( father's side) used to make the cheese like that, in a wooden pyramid. I liked it as a child, haven't had it since then.

Good Easter to you, Andrey and your family.

Father'sDaughter March 31, 2018 09:04 AM

Thanks for posting the link, Andrey.

If my in-laws were still alive, we'd be with them having kielbasa with horseradish, pierogi, and babka (my two favorites are cheese and poppy seed) for brunch, and then joining my family later in the day for the full Italian spread.

Tomorrow it'll be a late (and large!) Italian lunch with the traditional Easter ham tossed in just for good measure!

pondgardener March 31, 2018 10:42 AM

Ham, klobasi, sauerkraut, Hrudka(Easter Cheese) and potica. I forgot about poppyseed roll this year. My aunts always had a discussion as to whose was best...not enough filling or not rolled thin enough.

Happy Easter to all!

upcountrygirl March 31, 2018 11:29 AM

Y'all have given me new to me foods to research. Thanks!

Andrey... those links are pretty neat! Thanks!

I need to remember to try elote this summer when the corn is in season!

Happy Easter weekend, everyone!

Worth1 March 31, 2018 02:23 PM

I came home from a long day at a tire shop buying tires and getting an inspection sticker.
Stopped at the store and didn't have a clue what I wanted for easter so I got myself 3 choices.
Bratwurst, catfish Po boys or more hot wings.

clkeiper March 31, 2018 03:26 PM

ham, homemade bread, greenbeans, german potato salad, party potatoes, applesauce, salad, and angel-food cake with fruit in a sauce. today. tomorrow? no idea. going to a friends house for dinner. I am taking the salad.

whistech March 31, 2018 04:02 PM
