What? Srpouts on new tubers
 
What would cause the potatoes, just dug, to have sprouts on them?

Just my observations, not a potato expert here, but until someones else comes along I'll post my 2 cents. It seems that once the potatoes are mature, if they experience a couple weeks of soil that's too warm, especially if they're near the surface and are getting some light, too, they can come out of dormancy and sprout. I had that happen with several spuds this year, so I'm chalking it up to the heat wave we endured.

Heat Sprouts.

Look it up on a Google search.
Some varieties are more prone to it than others. The use of the word "Heat" is there because the tubers sprout due to heat stresses.

Well we had a heat wave and lots of rain. I'm surprised they weren't steam cooked.
