Looking for a sweet-ish dressing for slaw
For a number of reasons, my wife and I had not visited the local KFC place in several years. But when the management changed, we decided to try it again. The surprise we both had was the slaw. The local supermarkets sold chicken from roasted to fried with all kinds of sides available. But I always found the slaw to be much to tart (as in too much vinegar).
So, what I'm looking for is a recipe for a slaw dressing that is not so vinegary. It doesn't have to be the exact recipe for KFC's slaw dressing, but it should be close. Anybody have a "close" recipe???? Thanks in advance. |
for a largeish salad, I am not great at measuring but here's what I do:
about 3/4 cup mayo 2- taste tbsp sugar 1 tbs white vinegar 1 tbsp water 1tbsp fresh lemon or (even better) lime juice 1 tsp grainy mustard. pepper to taste, extra salt if you like. can adjust the sugar to taste. I find using part citrus instead of all vinegar gives tang and flavour without just the pure vinegar sourness. adding something like sweetened dried cranberries or chopped apples sweetens things up as well everything is approx because I dont measure really... but a starting point you can try and then adjust to what you like. Sugar. Lime juice. Mix and match to your liking. In my opinion far superior to KFC slaw. |
Miner's pretty close to Karen's but I don't add mustard and I toss in a few level teaspoons of celery seed.
If you're pressed for time try 1/2 cup each of mayonnaise, water, and your favorite bottled poppy seed dressing. If you want a bit more bite to it you can replace a teaspoon of the water with white vinegar. |
I'm agreeing with what is posted above this. The lemon/lime part can replace vinegar.
Karen, I haven't tried the grainy mustard, but I would most likely like it. Worth, it's Kraft Real Mayo :P (But use your favorite.) oldman, celery seed and poppy seeds sounds good. Now my input: Honey is something that wakes slaw up. Use the amount you desire. |

I have several recipes for slaw I dont just make the same thing all the time.'
depends on what I am eating it with. One has shredded sweet potato in it. Another pineapple. One with hot peppers. There was a restaurant in Freeport Texas years ago that gave a complementary bowl of very good slaw with every meal I do think. |
Copycat KFC Coleslaw
Serves: 8 servings Ingredients ½ cup mayonnaise (I use light) ¼ cup buttermilk 1½ Tbls apple cider vinegar 2 Tbls lemon juice (fresh is best) ⅓ cup sugar ½ tsp salt ⅛ tsp pepper ½ tsp celery seed 16 oz shredded bagged cole slaw mix Instructions Whisk together all the ingredients except for the shredded cole slaw mix. Thanks, folks. I appreciate your help. Today, I was at the store and purchased the following:
Duke's Real Mayonnaise 6 beautiful Limes 6 beautiful Lemons Gallon of Apple Cider Vinegar We will begin some experiments that will include adding various fruits and other suggested favorites. I've decided to search for and find one recipe that fits my "Good Taste" standards. That's the same standard that I apply to all tomatoes. It should be a "happy" taste. I will also try different Mayo's during my testing. My DW has always liked JFG which is a local brand name started by local celebrity Archie Campbell. When I get done, I'll post the recipe I ended up with, including basic salt and pepper, etc. additions. I also intend to include regular white vinegar and "No Vinegar" experiments. I will be starting several cabbage plants this year to include red cabbage. I will try adding such things as: Diced onion Diced scallions Diced/shredded carrots Diced sprouts Perhaps some diced tomatoes Others as research and testing point to. Ted, you might try a variation that is a green shredded cabbage with a shredded tart apple in it, too.

I always loved Brianne's Poppy Seed dressing from the store for slaw, but allergies ruled that one out a few years ago, so I searched for recipes online and found copycats that were similar enough to not be able to tell any difference once the slaw was done. This is one I like:
adapted from thekitchenmccabe.com ¾ C. White Vinegar 1½ C. mild oil such as grapeseed, sunflower, or light olive ¾ C. Sugar 2 T. White, Yellow or sweet onion(I just eyeball a chunk of onion) 1¼ T. Salt ¾ t. Dry Mustard 1½ T. Poppy Seeds Instructions Place all ingredients except for the poppyseeds in a blender. Blend on high for at about 1 minute, or until the onion is fully chopped up and emulsified into the dressing. Add the poppy seeds and pulse a few times until incorporated into the dressing. Refrigerate for at least one hour before serving. |

Just made up a big batch of coleslaw the ingredients are apple cider vinegar Anaheim peppers crushed pineapple in heavy syrup sugar and Dukes mayonnaise.
