Ancient Grains and Seeds

A farm in NovaScotia is growing crops of grains and seed.
Bringing back old varieties. Passing through I picked up a variety and planted in one of three 3x3' beds out front near the road and in front of a long run of raspberries. By mid July it is somewhat shady so not much will grow in those beds but very early Spring peas. When I pulled the pea trellis I planted these seeds. Never paid much attention once the raspberries were done. A package yesterday was not for me but the neighbor, so I delivered and checked the grain bed. Surprised it did so well and lots of seed to harvest. I'll know what it is next weekend, 3 days off, when we go up to the farm where my seed suitcase is and the packet. (can't find the NovaScotia farm's website) Got a nasty paper cut from the thin bamboo like stalks trying to quickly grab a few, then went back out with some pruners. Size of a black sesame seed but shape is more like a buckwheat. Pretty. |

Thinking I might put in two more beds and grow a few varieties
next year. I've been making sprouted grain, seed, and nut crackers and a bread. Last weekends batch... The crackers are real crispy, like a cross between a wheat thin and a triscuit. Much better without that weird packaged taste. |

Halifax seed Co. sells some AnnapolisSeed. I had lost tract of them so thanks so much for the link. I will definitely order more varieties. The ZiarBreadSeedPoppy, Welsh Triticale... So many I would like to try. Impressive how many seed i have from just 9sq ft. |

Life changing crackers

[B][/B] 'Life changing' is a bit of a stretch yet the simplicity is way beyond what I've made in the past. Years ago I came up with a few varieties of flatbread crackers using a dozen recipes to get to near perfect. Sent them off as x-mas gifts. Uses a hand crank pasta roller so time consuming. First time I've had success with a recipe as written. Tweaks and experimenting is encouraged as long as the important ingredients are not replaced. Psylium, chia, flax, and the oats. *I don't care much for hulled sunflower seeds so I use Pepitas' (hull-less pumpkin seed). And hemp hearts, sesame seed. *the whole flax seed I do a quick quick pulse in a spice grinder to break the hull a bit. *dairy free, gluten free...we don't fit or follow any category like Vegan but focus on whole fresh food, no processed foods, no cans or jar heat processed. Fresh, raw, frozen, roasted. Meat, fish, eggs, cheese, love it all. Just limit that to 20%. (no measuring, lol) *once in the sheet pans, between parchment, I let rest for minimum 10 hrs, stacked and covered. One quick tip. A batch fits perfectly in a quart BallJar. While I'm
at it measuring anyway, I just make up an extra two-three 'kits' so I just need to mix with the water and 3 tbsp oil. Also lets me know if I'm running low on oats, etc. |

Seems to be lots of replacements for oats. Quinoa flake, almond
or chickpea flour. Must be over 2,000 responses at the end where others have posted successful replacements. Rice flour? I have trays rolled out resting today that I'll bake tonight. Should have toasted the pepitas even though they toast while cooking...I like them a bit more than how they came out. Then chop a bit. Pecans chopped to a course meal....?...rather than a flour. It is the phylum and the chia that is the crispy glue that holds them together so many things will work me thinks. She has some great recipes. The chocolate granola! and other replacement for that awful goop 'oatmeal' I can't swallow. What about buckwheat groats. Not a wheat at all. It is a fruit seed similar to rhubarb or sorrel.
