I've never grown this one before and was wondering if any of you had a good way to fix these on the grill?:love:

If you pick it earlier it would be less bitter. Any bitter eggplant needs to be soaked in salty water (precut). Than you need to squeeze the excess water out. Make sure it is not overt salted.
Mayo is another way to marinade it as well.

About how long do you soak it? Slice then soak? Marinade it in mayo after the salt water soaking?:panic:

Slice then soak (make sure it is covered with water) for 20 minutes. A bit of oil and ready to BBQ. (you can bite to taste eggplant for bitterness and salt)
Second recipe: marinade it in mayo for 20 minutes, than BBQ.

I have never had a problem with any white skinned eggplant being bitter but I don't try to grow giant eggplant either. I agree smaller will be milder and less seedy. My one complaint about the white varieties is the skin tends to be thicker so I always peel them. Enjoy!
