Lentils don't have a lot of flavor (imo) and they get mushy very quick, so they must be cooked carefully and seasoned well. and I am sure that different colors taste different. I made a pot of soup that had lentils in it last week (per a request from my daughter) and I could have cooked them a little gentler and for a bit less time. They do make a great thickener for a soup though. Then I add lots of garlic and some salt because I don't think they have much flavor, but they are very nutritious.
