Apple Butter looks really good, surprised I've never tried it before.

After tasting some freshly made strawberry jam at a cafe in Berkeley, and learned to make my own, I could no longer enjoy store bought jams (even Trader Joe's), too artificial tasting and too coyly sweet. Whenever we have pancakes or waffles at home, I just make a fresh batch of jam with whatever we have on hand, peach, strawberry, frozen berries, apricot, kiwi, mango, etc.

Quick Jam -

Coarsely chop up fruits or berries of choice. Transfer to a small saucepan, and stir in sugar and lemon juice to taste. Cook over medium-high, stirring frequently, until jam is thickened and bubbles completely cover surface, fruit rises to the top, and jam sticks to a spoon when lifted, about 10 minutes. Serve or refrigerate for later use.
