Make sure you get all the bulbils around it when you harvest. Or leave and always have elephant garlic. Around here, it has naturalized around old farms and has become a pest. I use it as a natural planting sign. When the first green tips emerge, it is time to plant garlic and shelling peas. Of course, in NY it could act a lot different... Even though it is not a true garlic, I don't care, it tastes great to me and it's easy to grow around here.
