Default Controlled breeding

If my varieties don't have exserted reproductive organs and I'd like to cross them, do I need to

Spay" the "father" (or just remove the stamen), and bag a potential mother until it's about to open then "neuter" cross then rebag?

It's my first season being able to breed tomatoes and I'm hoping to do something along the line of Brad's Black Heart intentionally with the most productive of Indian Zebra, Amazon Chocolate, Polaris, Black Krim, Bear Creek on the most productive of Fish Lake or Goatbag (in my area).

If I wanted to landrace/swarm would I just open the petals of the flowers?

Is that a scalpel/tweezers job or is there a more efficient way to make tomato blossoms more receptive?
