Pumpkin Apple Waffles

1 large egg, beaten
2 egg whites, beaten
4 tablespoons brown sugar
1 cup evaporated skim milk
2 tablespoons vegetable oil
1/2 cup canned pumpkin puree
2 teaspoons vanilla
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1 - 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1/4 teaspoon cloves
1/2 cup apples, finely diced
1/4 cup toasted walnuts
Beat together egg, egg whites, sugar, milk, oil, pumpkin and vanilla. Mix together dry ingredients. Add dry mixture to egg mixture (being careful not to overmix). Fold in apple and nuts.
Make waffle in waffle maker with about 3/4 cup batter per waffle.
