Spinach and Tomato Soup
1 Onion, Chopped
2 Tsp Garlic, Minced
2 Tbsp Olive Oil
4 Cups Chicken Stock
1/2 Cup Orzo
3 Tomatoes, Diced
1 Lb Fresh Spinach (or 10 Oz frozen), Chopped
1 Tbsp Fresh Basil, Minced
1/2 Tsp. Pepper
Grated Parmesan
• In a pot, heat the oil and sauté the onion and garlic until fragrant and translucent.
• Add the stock and bring to a boil.
• Reduce heat to medium low and add the orzo.
• Simmer for 10 minutes.
• Stir in the spinach and tomatoes.
• Simmer 5 minutes.
• Stir in the basil and pepper.
• Ladle into soup bowls and sprinkle with the Parmesan.
