Mock Raspberry Jam
Yield 2 pints
3 pounds green tomatoes
2 cups sugar
1 ( 3 oz.) package raspberry gelatin
Remove core from tomatoes and cut into chunks. Puree in blender until you have 2 cups. Place tomatoes in saucepan, add sugar; stir a bit and boil for 15 minutes. Remove from the heat and add gelatin.
Pour into containers and refrigerate or freeze.
