FIESTA DIP

1 tsp olive or vegetable oil
1 tbs chopped green chiles
1 cup Monterey Jack cheese, coarsely grated
8 oz pkg reduced fat cream cheese
Blue or Yellow corn tortilla chips
2.25 oz can sliced olives, drained
1 cup cheddar cheese, coarsely grated
10 oz pkg chopped frozen spinach, thawed, drained
2 tomatoes, seeded, chopped
1/3 cup onion

HEAT oven to 400 degrees.
Cook onion in oil in skillet 5 min. or until tender.
Add tomato and chiles, cook 2 min.
Transfer mixture to a bowl, add spinach, cheeses and olives, stirring well.

SPOON mixture into a buttered 2 quart baking dish.
Bake, uncovered, 35 min. or until golden and bubbly.

SERVE---warm with tortilla chips.

Makes 6 cups of dip
