I always skin mine for sauce but I also freeze some whole tomatoes too. Just wash and dry them and place in ZipLoc bags in the freezer.

When you want to add a tomato to something that you are cooking, just pull one out and run it under lukewarm water fro about 10 seconds. The skin will slip right off and you can core and chop it for whatever you are cooking. It adds a nice fresh tomato flavoe.
