I made this a couple of weeks ago. I now have another nice Aswad Eggplant so I plan on making it tomorrow night for dinner. It is great because you skip the frying step and bake the eggplant first in the oven with a corn flake/Parmesan cheese coating. After it is crispy you add the sauce and Mozzarella cheese ( I really like Polly-O brand).
It came out great. It is a vegetarian dish.
