My Sister-in-laws Marinated Tomatoes

3 large tomatoes, sliced
1/2 cup olive oil
1/4 cup red wine vinegar
1 1/2 tsp Dijon mustard
1 clove garlic (or to taste), minced
1/8 tsp basil
1/8 tsp pepper
1/4 tsp thyme
1/2 tsp salt
1 Tbs parsley, chopped
Combine all ingredients, except tomatoes, and mix well. Add sliced tomatoes. Serve the same day.
