Caribbean Sofrito - Vegetable Paste

Amount Measure Ingredient -- Preparation Method

Wine -- for sauteing
1 medium onion -- diced
1 red bell pepper -- diced
2 large garlic cloves -- diced
3 tablespoons minced fresh cilantro
Salt and fresh grnd pepper

Saute/fry the onion and bell pepper in the wine over medium heat for about 15 min. Add in the garlic, cilantro, salt and pepper; cook for about 2 min more and it's ready to use.Keeps well in the fridge.
