Agree with Karen that the bicolors are most likely to have the mellow fruity flavors, though maybe not exactly peach. I once had a Yellow Brandywine that had a hint of cantaloupe. Unfortunately I was not into saving seeds at the time, and later plants did not repeat the nuance.
