We love Briami (something like this, but we don't cook with oil):

Something like this,
but I like it chunky, so I chop 3/4 of the roasted eggplant, puree the rest of the eggplant with the other ingredients, and then add the puree to the chunks of eggplant. Add smoked paprika if you like it spicier.
