Default Foaming oil???:>(

Foaming oil.
Can someone tell me why oil starts to foam, I have found it starts to do this after awhile and sometimes right after I cook certain things like mackerel patties.
After this starts it is more or less worthless.
At no time has this oil been over heated.
Is there a way to fix it?
