That would be cool. I'm interested. I haven't eaten any yet, but I assume the flesh is yellow because of the name. The skin is red/pink. Again I don't know much about potatoes, but I assume that red skin/yellow flesh is an unusual combination (or one that you had to work on a bit to get).
