TOMATOES WITH CORN AND OKRA
1 medium sweet onion, chopped
3 tablespoons butter
1/2 pound fresh okra, sliced
3 ears fresh corn, cut from the cob
4 medium tomatoes, peeled and chopped
1/2 teaspoon sugar
1 teaspoon salt
1/4 teaspoon black pepper
In a Dutch oven, saute onions in butter until soft. Add okra and cook another 5 minutes, stirring occasionally. Add remaining ingredients and mix well. Cover and simmer 15 minutes longer.
