Red podded peas in a wok would need the right sauce: Something with a bit of vinegar or acid to retain the red color during cooking.

Here's what one of the first pea pods looked like yesterday. Still too soon to tell if it's mange tout.



Today I was visiting a different field where these peas are growing, and I noticed some with huge flowers. Sorry about the poor quality photo.
