I freeze my extra tomatoes because it's easiest to do when you're busy - just put into a ziploc bag and into the freezer. And making sauce is another way, I don't have a canner so I freeze the sauce as well which is easy and doesn't take much space. My favorite sauce and easiest to do is to toss the cut up tomatoes with a bit of oil, garlic, salt, pepper and herbs, then spread them out in a baking dish, roast at 400 F for at least half an hour. Then I turn the oven off and let them continue to dry a bit in the oven overnight. Roasting really brings out the best, even in a plain red tomato.
