FRIED SHOESTRING CARROTS
2 c. self-rising flour
1 ½ c. water
1 t. salt, divided
¾ t. cayenne, divided
½ t. pepper, divided
10 c. shredded carrots
• Whisk flour, ½ t. salt;¼ t. cayenne and ¼ t. pepper until smooth.
• Stir in carrots.
• In separate bowl combine remaining salt, cayenne and pepper.
• Deep fry at 375* F. by dropping spoonfuls into oil.
• Fry 3 to 4 minutes or until golden brown.
• Drain and sprinkle.
