If I had the knowledge you apparently have, plus a really good place for all the prep and curing work as you have; I would also have a specialty shop selling cured meats, cheeses, and wines. Make a deal with a local bakery to also sell their bread loafs and rolls and you could provide a full meal deal to your customers. The bakery could hang some of your sausages for sale and you would sell their bread and rolls. Of course you would also have a huge jar of dill pickles and a jar of sour pickles on the counter. Jake (my oldest) and me did all the meat with help from friends. His brother (Joe)is a plumber and could care less. Their mom is in charge of the building. We split years ago, but are "civil" to each other, which is a good thing. |

Turkey pastrami can be very good, depending on who makes it. Boar's head brand is good.
That hotel building is lovely! Must be great to have space to work in there.
