I have 2 plants 75 days in the ground so far still green and loaded, I which i had a way to eat them. Because i have herd they are in stores when they are red, vinegar maybe?

Last year, I pickled as many as my plants grew. Some were red and most were green, all fabulous! This year, I'll cut them into strips prior to pickling.
