1.)combine 4 cups fresh tomatoes cored peeled and chopped or (canned)
with 4 cups tomato juice (you can use part chicken or vegetable stock) 2.)simmer 30 minutes 3.)puree with 12-14 basil leaves, 1 cup heavy cream, 1 stick sweet unsalted butter, salt and fresh cracked pepper while stirring over low heat. garnish with basil leaves THE BEST TOMATO SOUP EVER ![]() |

charley, what is your favorite variety of fresh tomato? I'm trying to find a great recipe for each of the varieties I will be growing. Sometimes a more acid or a more sweet works best for soup for instance.

Sounds really good! I would be inclined to add some browned ground lamb as a variation.
