Patrina, smoking them sounds really good. I've not tried it.

I've tasted smoked eggplant in Baba Ganoush. Oh my. What a diff that makes (versus just grilling in oven).

You just get take the eggplant, stab it with a fork, and burn the skin on the gas burner on your stove or burn the skin of the eggplant on the BBQ grill... the burnt skin is what imparts the smoky flavor into the flesh. Easy. A smoker is superfluous.
