I love cilantro. I use it as others have stated above, but I also use it as a salad green. It is strongly flavored, but I enjoy it a lot. I like to make my own "vietnamese" salad as follows:
Red and green leaf lettuce make up 2/3 of the greens, with cilantro making up the rest. I matchstick a lot of radishes, carrots, cucumbers and red bell peppers, top it off with those big juicy bean sprouts and then mix up some asian sesame dressing (Good Seasons has a good powdered one using their cruets like the Italian dressings you see). If I want a heavier meal, I add rice vermicelli noodles and spicy pork strips, as well. It really makes for a nice summer meal. |

House! I just saw this recipe you posted last week with lots of Cilantro!! It sounds mahvellous! I'm another Cilantro lover. I'll be trying this for sure.

Blue- I had it tonight sans pork and it hit the spot. If you do the vermicelli thing, be sure to have some springroll sauce on hand or at least rice wine vinegar and red pepper flakes to give it a kick.
