That is what I am cooking fried in the beef fat I rendered from the brisket trimmings I had from making corned beef.
Plus fries.
Waste not want not.
Plus I had the beef cracklings for a snack.

I used to keep a freezer full of catfish when I was a bit younger. We love it! Flathead belly is a delicacy here. I used to package it separately for Sunday dinners.

Not sure I've ever seen or heard of sweet potatoes in cole slaw,is that a southern / texas thing ?

Flathead is the cream of the crop when it comes to catfish. I try to keep several bags of crappie in mine. Love catching & eating them.

I caught a 15 pound Yellow Cat what some folks call a Flathead when I was 14 years old with a Zebco 33 with 10 pound test line one night.
What a fight it was, it took almost 30 minutes fighting that catfish to bring it in.
Caught on earthworms dug from our barn yard.

Several years ago my son caught this one on the Grand River here in MI, just over 30lbs. and he like other big ones go back to live another day, only keep the ones under 5 lbs. but like you've said they sure are good to eat! Channel cats are caught in the spring, but long summer nights waiting for a flathead to slowly start to peel line off the reel is a thrill that still makes me feel young.

While waiting on the Pastromi to cook I ate a big bowl of the coleslaw.
After sitting for 24 hours and mixing again the Manzano peppers really lit that stuff up.
Hot tangy sweet creamy tropical crunchy and addictive.
No better way to describe it.
My first time trying it.
