Oakley that is awesome. I have made my own paprika but that is it.

As far as peppers for seasonings you can use any of them. Some are better than others for flavor as I understand. The main thing is that they need thin walls. Jalapeños or bells wouldn't work very well unless you have a dehydrator.

My dehydrator is temporarily out of order this summer.
I can normally dry anything.

Someone once told me they dehydrated a watermelon. Said it shrunk to the size of a quarter and was one of the sweetest things they ever ate.

NorthBayTradingCo has some great freeze and air dried finds. Good tomato flake and powder.

That covers the main sources.

Many i pick up at International groceries but my main recipes i need consistent results and use MRHerb. Nice thing about using the date and batch # i can tweak or make a special seasonal blends like smoked pepper and roasted tomato dry rub for a winter oven roasted bbq chicken.
