I don't think that is possible. Restricting to a single stem works the opposite way, that is the single branch gets all the nutrients and grows like a vine.
Yeah, topping the main, at any time should encourage lateral branches to grow. But I would've done it early on.
Next year I will experiment making indterminant to grow bushy from early on, by cutting off the main when it is about 2 ft tall.
