Who in their right mind would put a pot of beans on the stove and go to bed.
I do and here they are after being on the lowest setting all night in a cast iron kettle.
One one pound bag of beans soaked rinsed and drained.
Six huge spoons of chilli powder.
One onion chopped.
One spoon of chilli arbol.
One spoon of garlic powder.
One half teaspoon of salt.
One quarter stick of butter.
Fill to almost the top bring to simmer stir.
Turn to warm or just above and walk away with a lid on it.

Yeah right.

Folks I made a boo boo you might say a really big boo boo.
I decided to make white cornbread muffins without the sugar I hate sugar in cornbread.
Well fine and dandy but I wanted to put some hot peppers in it to pretty them up.
The only thing I had was the pepper salsa I made with the extra acid in it for a preservative.
Well guess what happens when the acid gets stirred up with all of the baking powder.
I knew what was going to happen just as I did it.
A cornbread explosion.
We shall see.

Looking good Worth! Glad to know someone else likes their cornbread without sugar. My wife likes those Jiffy Mix corn bread muffins and I tell her if she'd just add some icing she'd have cup cakes they're so sweet. Can't stand the things.

The recipe called for 1 cup of corn meal 1 cup of flour and 3/4 cup of sugar.
Are you kidding me 3/4 cup of sugar who comes up with this stuff.

While everyone else is eating lean I have decided to make fat soup.
No really I picked up some pretty good looking fat back and am going to attempt to make crock pot lard.
I added some water and am just going to sit back and let it happen.

While the fat soup is cooking I decided to make some peach wood smoked Mediterranean sea salt.
I looked in the store and they had some oak wood smoked salt for I think 1.75 an ounce.
This salt cost me that much for a pound and a half.
I have three pounds of it smoking.
After I took these pictures I put another pan in.

As for the lard I am trying something I haven't seen anyone else do on line we shale see what happens.
I bet this stuff comes out as white and pure as the driven snow.
I chose the fat back because I wanted a nice porky lard taste to my re-fried beans and some other food.
Something I miss.

Back to the smoked salt I have looked at a few videos and I dont think these folks get it.
You cant smoke salt in an hour and not ever stir it.
This may go on for days about ever 30 minutes or so I am stirring the salt for an even coating.
This is why I am doing 3 pounds of salt so I dont have to do it again.
The stuff I saw in the store was black.

The last pint of lard a little darker but still good and the cracklings the best part.
They go great as a salad topping.
