Default Hot Sauce Junkie

I love me some hot sauce. So much that I make my own. Anyone else? Mine's the 6th from the left.

You can go to the fermenting thread in the food preservation section. Preserving your harvest.

It is full of fermented hot sauce and other neat stuff.
If you haven't fermented peppers you are missing out.

Worth is right. When my superhots get out of hand, I pick the lot and ferment them for 10 days, then bottle the sauce. Must have used about 15 pounds of pods that way. Gets rave reviews. This year, I flavored with mustard, orange juice, etc. The mustard flavor was the favorite.

I cant imagine 15 pounds of super hots in the house, it's a wonder you didn't catch the place on fire.

I am with you. I love hot sauce and put it on darn near everything. Most of the door space in the fridge has hot sauce on it. Like you i too make my own.

Have you ever tried the Valentina, Cholula sauces or other sauces from Mexico?
These are the ones I like the best.

Yes. They are what I grew up on living in a small town in South Texas. They were on the table in every Mexican food restaurant. To me they represent the old traditional flavors of Mexico & Texas.

A particular favorite of mine is Mean Devil Woman. Seems to have national distribution.

And pepperhead friends use me as a guinea pig for their latest concoctions, so I haven't bought any in quite a while. Except for Tapatio, which I like on my morning sausage and biscuits. (There is also a Tapatio flavored Doritos. Fortunately my local store doesn't stock it or I'd be carrying another 20 lbs...)

I've been working on a Trini and Bajan (Trinidad and Barbados) style sauce. I finally grew the pepper of my dreams for it. The MOA Scotch Bonnet. The aroma is the stuff of dreams. Unfortunately I added culantro (Chandon beni), to my last batch which overwhelmed the scotch bonnet aroma. Hot Lollie's is Bajan. I'm told Motouk's hot sauce is reccommended for Trinidad and Tobago style.

And,sambal olek. And, a few other Asian style Chile paste in my spice rack.

I like a good sambal olek.

But Sabal Bajak is my fave.

Nice PIF Aaron, I'm in.

I still have a small amount of my own hot sauce from last season and looking forward to making something new this year. Just what I have not decided yet.
We have a growing amount of good hot sauce makers here as well as some brands from around the world. That is still small compared to what you guys can get your hands on.
My hot sauce shelf in the fridge is thinning out, so will be on the hunt for some new stuff soon.
Do you still have some Fire Dragon Chillies hot sauce? I have polished all mine off, I need to fix that soon.
