![]() I'm gonna hate myself later but I decided to make tamales out of at least part of the one of the pork roasts. Not today though, 'I'm just cooking the butt roast in one of my bigger cast iron dutch ovens.

![]() ![]() Salt, here's an idea for that chicken. Grab a pack of ramen and doctor it up. ![]() I smoked a chuck roast yesterday just to slice thin and use in ramen then added scallion, dried garlic and Thai basil. ![]() It was good to the last slurp!! ![]()

Looks good.
Here is my tamale making station under construction. Heading back to the store to get fresh masa not the dried masa. Also the chili sauce I made. It is mostly chili arbol with some ancho cumin salt one half large onion garlic powder. Cooked with water blended and strained. Corn husks have been simmering for hours. Went back to the spoon yet to master the tamale trowel.
![]() Spoon expert. The pictures coming soon will show the process and a helpful trick. Coins in the bottom of the kettle that rattle as long as there it water in the steamer. I made three different kinds dont know which ones are what and don't care. All are pork some mild some a little more hot and the fermented ghost pepper sauce ones. These things are huge.

how about chicken cordon bleu if you want to get a little fancy. i used to make it years
ago. i have simplified the cooking since then. now, we raise our own chickens. my son likes the chicken roasted. we eat that for a couple days, then i make soup from the carcass, and any leftovers. we haven't bought chicken from the grocery store in several years except to feed the pooch. keith

worth the tamales look awesome! Chicken Cacciatore, Chicken & dumplings...yum! I've got 2 new chicken recipes i want to try...one is a keto base one with chicken breasts, bacon, guacamole, sliced tomatoes, and cheese...the other is slow cooker cream cheese crack chicken chili.
It's also past time for me to start planning the thanksgiving meal.... |

Wasn't real hungry after running back to walmart today, so made a grilled cheese sandwich and was happy. The other day, the cashier overcharged me for a couple things ( multiple ringing of 1 item 2 or 3 times ), spoke with the store manager and got my refund w/o a hassle.

Today we took a whole homemade lasagna (made with home-grown tomatoes) out of the freezer, ate our fill, & packed the leftovers into meal-sized portions.
