Cruising the meat department I found this piece of pork belly for $6 and had to pick it up. Tony's on the back and salt on the skin and into the oven @ 350 for an hour.






Then under the broiler for a few minutes to crisp the skin. This was about 30 seconds too long, although burnt a little there's no burnt flavor. Just crispy outside and tender inside.



Love that mustard with cracklings!

Pork is so yummy as a stew. I like to use green enchilada sauce in it.

Yes you can, this is the cut used to make bacon. It's cured/brined then smoked and sliced how thick you want it.
