Default Corked or smooth?

Do you prefer a smooth or corked Jalapeno? I'm a corked fan, I was glad to see this on one of my Jalapeno plants.

When the Jalapenos get that, they are usually hotter. But you will rarely find that at the stores because the stores don't want that. The peppers lose moisture thru the corking so they don't have as good a shelf life for the stores.

jalapeno newb here.
I thought the corking formed when the jalapenos got older. Have a vague recollection that the walls were thicker with corking. Is that true, or is there a genetic difference in the corked ones?

Corked peppers are the preferred pepper here and in Mexico.

Most of what you see in the big stores are hybrids, with the corking bred out of them. They are usually larger and blander too.

Fortunately there are several Mexican grocers around here so I can get my corked Jalapeno fix during the off season.

Never really noticed any difference but I'd agree that many of my older peppers are corked while younger ones are smooth. Every jalapeno I leave on till it turns red will be corked...at least in my memory it seems they were.

The HEB grocery store/barn we shop at gets a lot of produce grown in Mexico. It is common to find corked Jalapenos at HEB.
