Jen,

I really want to be your friend, so here's another idea for you.

When I have too many tomatoes I put them in gallon freezer bags and stash them in the freezer. When I'm ready to make tomato sauce, I take out 5 bags at a time, run the tomatoes under hot water and the skins split and come off quite easily. I then put them into colanders with bowls underneath and leave them to thaw overnight. A lot of liquid comes out, resulting in less cooking time needed.

I always end up with a few bags of frozen tomatoes, and I take out 4 or 5 at a time, run them under the hot tap to de-skin and then toss them into the pressure cooker when making stews, soups and spag sauces.
