Default Fennel?

Thanks to the seed swap, I was able to grow some beautiful fennel. I have NO clue what to do with it? Anyone care to share a recipe with me please?

It is good in salads. Just google fennel salad and you will get many ideas. It is also good braised with lamb.

Fennel & Tomatoes Perfect for Tomatoville

Core and thinly slice 2 fennel bulbs; chop some of the fronds. Peel the cloves from 1 garlic bulb and toss with the fennel and fronds, 1 quartered lemon, 3 tablespoons olive oil and 1 teaspoon each salt and sugar on a baking sheet. Roast in a 500 degrees F oven until golden, about 20 minutes. Toss in 1 pint grape tomatoes; roast until the tomatoes burst, 7 more minutes.

I never appreciated fennel until my SIL made us a salad with arugula and thinly sliced fennel... I thought I went to heaven. What a perfect match.

Ottolenghi has a bunch of fennel salad recipes. If you google "Ottolenghi fennel salad" you'll find the rest. I have all of his cookbooks and make his recipes all the time, they're divine.
