I love my air fryer. I've been experimenting with different coatings and coating methods and cooking temps and time. My goal was to get fried okra as close to the fried okra I used to cook in hot oil. I think I found it today with a fifty/fifty blend of corn meal and Italian seasoned bread crumbs. I use one egg mixed with an equal part of milk to wet the okra. The milk/egg blend allows for a thinner coating. I mix salt, pepper, and garlic powder with the coating ingredients. Cooking at 400 degrees at 4 min, 4 min, and 3 min with some oil spray after the second 4 min; it came out perfectly browned and slightly crispy. Don't use any flour in the coating.

I have read Jasmine rice has to be extremely fresh to get any aromatics out of it.
I aged it for the texture not the aromatics that I have never been able to detect anyway.

Last night's supper was point end brisket sausage old school green beans with my homemade bacon tater salad and fermented pickles.

Mahatma is the best Jasmine rice I've found, it's in a small purple bag.

Nice spread Worth, that's the best thing about smoking a whole brisket=Leftovers!!!

Breakfast sausage and four scrambled eggs all cooked in the new lodge cast iron skillet.

For supper.

Sucked down in less than five minutes.

I have been suffering from a summer head cold or sinus infection for a week now and just now feeling better.
Busting headache right behind the left eye.
Seems as though the whole job site is sick been sick or about to get sick.

Thanks.
I went to bed at around 6:38 7:00 or so last night and had a good nights rest for once.
The night before that I woke up with my mouth open and it was as dry as death valley.
But I keep water by the bed and it felt so good to wet my mouth.
A lot of stress and confusion in my life right now that I hope is going away.
Cold practically gone and feel great.

Sometimes when I come home I warm up a cast iron skillet and have no idea what I am going to make.
But I know I will need a warm cast iron skillet to cook with.

Default Three old potatoes walked into a bar.

I had three old potatoes that needed to be used so I decided to make kartoffelpuffers.

With them I will have bratwurst and maybe some smoked brisket.
The bratwurst is fresh.
I will cook them in hot water at around 170 degrees F for 10 minutes or so and then flash cook them in hot oil to make the skins crispy.
But first I need to take my clothes off.









I'm doing laundry.

I just went though a summer cold that today was the first day without the headache part. Not sure if it over yet, but 10 days is enough. Besides the normal summer cold stuff - I've also had trouble staying asleep the past two nights. I'm not sure the sleep deprivation is a part of the cold though.

Anyway, get better ASAP Worth
