Default Growing for Seed

Howdy.

I am trying to be self sustaining in growing for selling transplants and later in the season tomatoes. I am planning on building out an area that I grow tomatoes specifically for seed. The reason for segregating them is because I intend to care for them a little differently than I do the plants I'm growing out to take fruit to market. I figure I'll aggressively prune these guys since I'm intending to harvest fruit solely for tasting (gotta make sure my varieties are good ) and seed.

So, my goal is to grow seed that I will plant out for selling transplants and to supply my own field tomatoes.

That being said, how many plants per variety should I target to maintain healthy stock with each variety?
