Ground Brisket in chili Rellenos is good.

At a local restaurant, we found chili rellenos made with regular un-spiced hamburger meat - it was awful.

I wish they could get the taco meat right at work.
For awhile it was great because they didn't put anything in it.
Why do I say this?
Because as I go through the line I ask the Mike head cook for chili powder and he gives me some.
I will then fill a bowl up with the tasteless taco meat and mix the powder and butter in with it.
Then I get 6 tacos and fill my plate up with the fixings and make my tacos at the table as opposed to trying to do it in line.

The alternative which is what they are doing now is to put taco mix in the meat.
It is so salty you can hardly eat it.
The guys are always baffled at the lengths I will go through to make my food taste right.

I even have my own Stove Top cornbread stuffing mix there because I cannot tell you how nasty the stuff is they make.
It is raw wet soggy bread mush.
You can see half slices of soggy bread in it.

Another reply to your post.
I ground the lean end up into fine grind meat and the fat end into the chilli meat.
To me if chili doesn't have some red oil on top it isn't right.

When I was a little kid my dad owned a body shop off the town square.
By the railroad tracks there was a tiny little cafe call Jordans.
Mrs Jordan owned and ran the place.
I wasn't old enough to go to school yet and my dad would sometimes take me to work.
We would stop off there to get something to eat in the morning.
He would let me order anything I wanted so I would get a bowl of chili.
The red grease would be floating on that bowl of chili and I would use crackers to soak up the grease.
I must have been around 5 years old.
Back in 2002 or so we were doing a job in that town and I got to see the wrecking ball knock that little cafe down.
I told the guys. "See that little shack they just knocked down, I used to eat there when I was a little kid".


Mrs Jordan for all intents looked just like Granny on the Silvester and Tweety Bird cartoon.

The dry ground brisket will have my usual spices and some chopped onion and Monterrey Jack cheese and egg in it as a binder.

First eeewww. Yes stuffing can be nasty if not made right. Jan and I both love stuffing and dressing. I think it is just a fun to make it as it is good to eat.

We feel the same about those packs of taco seasoning. Way too much salt ruins what taste is in it. That's a big part of why we're growing so many pepper varieties this year. I like our home dried chili powder much better than the store bought stuff.

Last year, I made Anaheim chili powder. The smell makes your mouth water. I also made Banana, Jalapeno, Smoked Jalapeno, and Tabasco. The Tabasco was too hot though.

I might be in the minority, but I like my chile relleno with cheese and no meat. I have never tried it with brisket, but they are NASTY with hamburger meat

Thanks the chips will have to wait an hour for the drink to wear off.
But I whipped this up right after your post.
lemon and lime juice.
1/2 Habanero.
Some fresh Jalapeno.
Yellow and red tomatoes.
Fresh cucumber.
Onion.
A pinch of vinegar.
A pinch of salt.
Everything fresh from the garden except the lemon lime and onion.
I think Enchiladas ar in order.

Ah Worth, finally I can say yum (sorry I'm vegetarian). But still I love reading your posts. That would have been a bit sad seeing the old cafe from your childhood getting knocked down.
Oh and yum to your "nice little drink from Mexico"!

Yes it was sad to see it fall but it isn't the only thing I have seen torn down from my past.

In Austin I used tor rent a house in the Hyde Park section with a back yard I grew a garden in.
Some time ago I drove past it and they stuck apartments in the back yard.
Thankfully the residents protested and they past a law no more condos and apartments.
