If you have a grocery that stocks Asian foods I recommend 3 Crabs Fish Sauce. They're all a bit different and price doesn't really indicate flavor, but l've put 3C in everything from deviled eggs to vegetable soup to stuffed squash.

Ok did it with the v8. You Texans might be on to something.
New favorite chili. Family declared it so and I agree.
No sugar
No vinegar
No chocolate
No oregano.
Lots of pasilla, so tasted funky until it cooked a while mellowed out beautifully after 3 hours.
Forgot the cumin, and didn't miss it.
Side cocktail was appropriate "the confident man"
INGREDIENTS
1½ ounces vodka
½ ounce St-Germain
½ ounce Aperol
1 ounce grapefruit juice
Ice

I think Red Boat is the best on the market now but haven't tried it, it's priced a little high for a condiment that I don't use enough. Have you tried it yet and if so what's your opinion? I've been using 3 crabs/Viet Huong and like it.

Here it is no more than a few minutes after I decided what to eat.
Three cheese enchiladas with my homemade chili on top.

What does masa harina do? Do you just put that in as a thickener?

It thickens and adds flavor.
I seldom have it on hand and add a corn tortilla or two to the pepper grind in its place.
