Uncoated paper plates will dry along with the seeds and can be used many times over.

I ferment seeds in half pint jars labeled with blue tape, then stick the blue tape to the rim of the plate after spreading the rinsed and well drained seeds onto it. Once they are dry, I scrape them off with an old credit card into a small, labeled ziplock, pull the blue tape off the plate and use it for the next batch of seeds.

Paper towel / coffee filter/ paper plate method has worked fine for me, at least so far. I've saved several varieties for the last two years, and all have been viable. Have even sent seeds to others in trade and they have reported good gernimation.
They might not be desinfected perfectly, but I trust we don't have any exotic diseases and pathogens I need to worry about... If I ever save seeds again, I am perfectly happy with that method.
