Default NEWBIE pepper saving question

HI,
I must admit that I am very new to saving pepper seeds; unlike tomato seeds.. I do know you let the peppers turn red before you harvest them.

My question is: When saving pepper seeds from hot varieties does the capsicum still stay on the dried pepper seeds? Should I use caution when touching the seeds to plant them next year?
