Default Jalapenos +

Some Jalapenos surrounding a few Balloons. I'll make Smoked Jalapeno flakes by cutting off the stem ends, then cutting down the middle and use a spoon to de-seed the peppers. Then I'll put them in my [cheap $100 smoker] until well smoked. Then I'll put then in the food dryer until they're dry enough for a food processor to pulverize into small flakes. Then all Winter they go into/on most anything.

I'm green with envy...sounds like a plan....I just need a smoker
...and enuff hot peppers...lol (minor details...lol)

Can you use a regular meat smoker, with the coals on one end and the peppers at the other? Run it cool? About how long?

I didn't smoke mine but did turn a few into powder.

Great pictures! Earl, what wood are you using? (I assume you are using wood?)

I'm hoping to get a glut of sweet peppers this year, so I can use them for this purpose. Smoke, dry and grind. Yum.
And of course chillies. That would be fab!

Johno, I don't see why not. I'd split and deseed the peppers first, then put them in a food dryer until they became brittle. They have to be brittle or they won't grind right. I'd put a heavy smoke to them for a few hours then transfer. I use one of those$100 electric smokers from walmart type store. Burned out the element and now use a one burner hot plate in the smoker.

Jerry, looking good! What do you use as a grinder?

Spatz, I don't remember the type of wood, I've got several types. Any good smoking wood will do. Thick fleshed peppers don't dry very brittle, so you make have to chop/grind them into small pieces the best you can after drying for awhile, then re-dry them to get them brittle enough to powder.

Hey Earl,

Sorry for the delay in responding to your question. I used a Cusinart Mini-Mate Plus. It’s a small hand held unit. It does a real nice job. See the attached link.

Nice photos and thread. I dont dry jalapenos, but I do fhabanero, cayenne and serrano. Since its so dry here, I just pick them and put them in a large platter in the kitchen. When they are dry, I store them, and grind some periodically in a coffee mill grinder I bought. I grind them as needed because I think they are fresher that way. After they are ground, I put them in a shaker, and we use them. I probably grind about once or twice a month.
